Vegan Chocolate is unique - Most
chocolate, even dark chocolate, usually involves
the use of milk. In dark chocolate there may be,
for example, butterfat and skimmed milk or whey
proteins, the reason being that milk proteins act
as emulsifiers in order to mix well together cocoa
solids and cocoa butter. However, if you are vegan
or if you are intolerant or allergic to milk and
dairy products, you do not have to give up eating
chocolate, because nowadays you can find good vegan
chocolate on the market. Vegan chocolate contains
soy lecithin instead of milk proteins as emulsifier
and there are some companies that produce only vegan
chocolate. It is better to choose companies that
make vegan only products, because companies that
make milk chocolate can still use the same machinery
to make vegan chocolate and milk
chocolate. The machines are cleaned between
each use, but there may still be traces of dairy
products left.

Vegan chocolate and mint cake – recipe
Ingredients: 300 gr of wheat flour, 200 gr of sugar,
6 tablespoons of bitter cocoa powder;
6 tablespoons of baking powder; 5/6 fresh mint leaves
cut into small bits; 1 teaspoon of salt; 500 ml
of water; 190 ml of olive oil; 2 teaspoons of rice
vinegar; 2 teaspoons of vanilla extract or a vanilla
pod.
Turn on the oven at about 180 degrees Celcius.
Mix flour, sugar, cocoa, baking powder salt and
mint in a bowl. When everything is well mixed add
water, oil, vinegar and vanilla extract. Stir this
mixture until the bubbles disappear and flour and
sugar have melted homogenoeusly. The mixture will
look rather liquid, but this is normal.
Pour the cake mixture in a baking-pan (not a large
one though) and let it cook for 40/45 minutes. Once
the cake is cooked, let it cool down for at least
one hour before serving it. This cake goes very
well with vegan cream or icecream.
